A delicious cake recipe for Vinnie's first birthday featuring flour, baking soda, vegetable oil, peanut butter, applesauce, pumpkin puree, and egg, topped with a creamy Greek yogurt and peanut butter frosting.
1: Preheat oven to 350 degrees F.
2: In a large bowl, combine flour and baking soda.
3: In a separate bowl, mix together vegetable oil, peanut butter, applesauce, and pumpkin puree. Once combined, mix in egg.
4: Combine wet and dry ingredients and stir until combined.
5: Pour mixture into an 8” round pan (a square pan can also be used) that has been greased with oil.
6: Bake for approximately 25-30 minutes or until a toothpick inserted into the center comes out clean.
7: Allow to cool on a wire rack prior to removing from the pan.
8: After cooling, add frosting.
9: For frosting, mix Greek yogurt and peanut butter until well combined.
10: If not eating immediately, put it in the fridge.
